Instructions
- In a bowl or stand mixer, beat the whipping cream to soft peaks and set aside.
 - In another bowl, whip the cream cheese, sweetener, and vanilla until it is nice and fluffy.
 - Add in the sour cream and whip again until it has been incorporated and has a smooth consistency.
 - Spoon in the ube extract and stir until it has been mixed thoroughly.
 - Scoop the mix into a lined mini muffin tin (makes about 24). Sprinkle on some coconut flakes (optional).
 - Chill in the fridge for a minimum of 4 hours before serving.
