Instructions

  1. Place the cauliflower in a large pot and cover with water. Add ½ teaspoon of salt and bring water to a boil. Cover and let cook for about 6-8 minutes, or until it is fork-tender.
  2. Drain well and blend in a food processor with heavy cream, 1 Tbsp butter, and the remaining 1½ tsp salt, and pepper until smooth. You can also use a hand blender to blend it right in the pot or in a bowl.
  3. Melt the remaining butter in a large skillet over medium heat, add the finely shredded cabbage, and saute for about 3 minutes.
  4. Add the thinly sliced green onions and chives to the skillet, and saute for 2 minutes. Reduce the heat to low.
  5. Pour the mashed cauliflower into the skillet and combine. Add more salt and/or pepper to taste (don’t be afraid to add more salt!), and serve warm.
