Instructions

  1. Place a medium saucepan over medium heat, and add milk, cocoa powder, coconut oil and vanilla extract. Whisk the ingredients together constantly for 5 minutes until frothy. Turn off the heat and set aside.
  2. Add dark chocolate chips to a glass or metal bowl, then pour the hot chocolate milk mixture over the chips. Whisk together until the chips melt completely. Set aside and allow it to cool down some.
  3. Transfer the mixture to an ice cube tray, divideing it evenly among the wells. Pro tip: if possible, use a silicone ice cube tray so it is easier to remove the chocolate once frozen.
  4. Place in the freezer for about 3-4 hours, or until hardened. Remove from the ice cube tray and enjoy them as a cold treat! You could also add them to iced coffee to make a low-carb iced mocha.
  5. Store remaining chocolate cubes in the tray in your freezer to avoid melting.
